Sirloin Flap

Sirloin flap, also known as bavette steak, comes from the bottom part of the sirloin, near the flank and round. It’s a thin, long, and well-marbled cut with a loose grain and rich beefy flavor, very similar to flank or skirt steak but usually more tender and juicier.
